Course Description

The Supplemental Nutrition Assistance Program (SNAP) is a critical nutritional assistance program that has served as the nation’s first line of defense against hunger for low-income people. This intermediate level continuing education course provides information about how SNAP helps millions of people get the food that they need and improve nutrient availability. Past research on program operations and outcomes is summarized as well as ideas to strengthen and improve program quality.  Finally, characteristics of SNAP participants are discussed along with ways to ensure access to the program.


Course Objectives

  1. 1. Summarize the incidence of food insecurity in the United States and the characteristics of SNAP participants. 
  2. 2. Discuss how SNAP participation raises food expenditures and improves nutrient availability.
  3. 3. Outline the administrative processes and functions of SNAP and how these impact interactions with clients.
  4. 4. Identify SNAP participation rates by subgroups and by states and review reasons that those who may be eligible for the program do no participate.
  5. 5. Describe food choices, diet quality, and food expenditures among SNAP participants.
